WINE TASTING NOTES:
Our highly fragrant 2016 William Hill Estate North Coast Sauvignon Blanc offers aromas of citrus and honeysuckle. On the palate, the wine’s cool fermentation resulted in zesty notes of Meyer lemon, lime leaf, ripe pear and hints of peach. Balanced, smooth and round, our North Coast Sauvignon Blanc is clean and refreshingly crisp on the finish.

VITICULTURE NOTES:
The 2016 vintage was another in five consecutive years of exquisite growing seasons. Marked by typical rainfall levels through winter and early spring followed by a consistently sunny and mild summer, vineyards responded with a nicely balanced crop and healthy growth. Grapes developed slowly and evenly throughout the ideal summer, cooled at night by the North Coast’s renowned diurnal temperature shift. Our North Coast Sauvignon Blanc was selected from a variety of vineyards, with the largest share coming from estate vineyards in Sonoma County. Harvest began a bit early, yielding uniformly high quality Sauvignon Blanc with its signature zesty acidity and well-developed citrus, stone fruit and tropical flavors.

WINEMAKER NOTES:
2016 will be remembered as a warm and generous vintage providing ideal conditions for Sauvignon Blanc to shine. With our sights set on a vibrant and expressive North Coast Sauvignon Blanc we aimed for long, slow, cool and clean fermentations. Night harvested grapes were pressed and then the juice was racked off of heavy lees to prepare for fermentation. Fermentation was kept cool to preserve the bright aromatics and flavor characteristics of Sauvignon Blanc. The cooler temperatures slowed the process, allowing more time on remaining light lees thereby imparting textural richness and layered fruit complexity. The final selected lots were blended a month prior to bottling allowing the flavors and textures to come together and harmonize.
