Description

WINE TASTING NOTES:
Our William Hill Estate Central Coast Cabernet Sauvignon is a rich expression of the Central Coast. Plush, fruit-forward notes of ripe plum, blackberry, black cherry and blueberry on the velvety palate blend with subtle notes of chocolate, vanilla and spice. Smooth tannins and balanced structure round out this approachable Cabernet Sauvignon.

VITICULTURE NOTES:
In 2016, we selected the Cabernet Sauvignon for this wine from a combination of premier vineyards on California’s Central Coast. Fruit was primarily grown in Paso Robles and the Hames Valley in southern Monterey County. These growing regions are renowned for a large diurnal swing that allows the grapes to ripen during the day and retain their natural acidity in the evening. The 2016 harvest in California was early, with exceptional fruit quality. A hot spring and early summer, typically cool nighttime temperatures and a mild July and August allowed grapes to slowly and evenly reach maturity. Grapes were concentrated and complex, reflecting the excellent vintage.

WINEMAKER NOTES:
The grapes were harvested in the early morning, destemmed and crushed at the winery. Fermentation occurred at warm temperatures up to 85º Fahrenheit with frequent rack-and-returns and pump-overs to extract color and flavor. After fermentation, the must was pressed lightly to extract the remaining wine from the skins. Aging with French oak has enhanced the complexity and texture of the wine.
