Description

WINE TASTING NOTES:
Our Napa Valley Cabernet Sauvignon opens with dense purple color and aromas of dark fruit and spice. On the palate, generous notes of blackberry, black cherry and plum mingle with accents of clove, licorice and earth. Rich and complex, this full-bodied and well-structured Cabernet finishes with fine tannins and lingering notes of fruit and spice.

VITICULTURE NOTES:
The Napa Valley AVA is renowned for its long growing season, marked by warm, sunny days and cool evenings. These growing conditions are ideal for allowing grapes to ripen slowly and evenly. For this Cabernet Sauvignon, 96% of the grapes were grown on our estate vineyard in Napa Valley. The 2014 vintage in Napa Valley was excellent. A dry, warm growing season led to an early harvest that produced a high quality crop of dark fruit with refined tannins and juicy acidity.

WINEMAKER NOTES:
Upon arrival at the winery, the grapes were destemmed and crushed before three to five days of cold soaking to enhance the extraction of color and flavor. The must was fermented in small, stainless steel tanks. The wine remained in contact with the skins for up to 25 days before pressing. It was then racked to barrel where it underwent malolactic fermentation on lees to enhance the mouthfeel. This wine was managed as individual lots and racked up to four times during aging. Aged for 19 months on a combination of French (27% new) and American (10% new) oak barrels.
